Khakhra Sandwich ~ Quick Indian Snack

All these years – more than two decades – the Anjali chopping board was my kitchen obsession. Whenever I enter the kitchen, it is the first thing I reach out for. And it lasts for years. I think the one I am currently using is my third piece – and I think that speaks pretty well for how sturdy it is.

Now, another chopping gadget has joined the ranks – the Tupperware chopper. A thoughtful gift from someone I adore – Nirmala Jamad (husband’s nephew’s wife or as they say in Rajasthani – ‘naanda ri bahu’). But it was sister-in-law Namita Mardia who came home a few months later and did the inaugural chopping with this gadget. We all stood, transfixed, watching her as she briskly added the veggies into the chopper, pulled at the string a few times, and was done with the salad. Wow! Obviously, no looking back for me.

And then, the khakhras arrived from Sadhana Chordia. A variety of flavours in cute compact packets. Along with some guests. Not happy with the snacks at home, I simply added some cheese to the shredded salad, tossed it along with chilli flakes and basil, and sandwiched it between the cumin khakhras. And titled it “The Khakhra Sandwich”. Compliments poured in for the instant snack. Now it is a regular feature in the kitchen. We even tried a sweetish fruit salad with the vanilla khakhras. And a cashew-biscuit spread with the chocolate khakras. I am sure it is obvious that I am having a blast with my new chopper and the handy khakhras.

So here it is, my simple and instant recipe for Khakhra Sandwich.
You will require:

  • A cup of shredded salad – my favourite is red and yellow peppers, carrots and cabbage. I also enjoy tossing in a fist full of tender corn niblets at the end.
  • Seasoning – salt, chilli flakes, pepper and herbs.
  • Grated cheese or paneer
  • 1 small packet of cumin or coriander khakhras.

Toss the salad along with the seasoning and the grated cheese.
Sandwich between two khakhras and serve immeditately.

Well! Pratibha nice recipe. I bought a similar chopping gadget from Prestige and I know why my friend on FB was raving about it. I use it to chop onions and carrots and add them to instant dosas I make using all sorts of flours that I have in my shelf!
